How these records were made

Sources, evidence grades, estimated quantities and what is deliberately left blank.

Sources

Records are built from publicly published Iranian cultural and tourism sources. Every dish page links the source it was drawn from, and shows its record ID so the same dish can be found again after any future revision.

Evidence grades

A: the source documents this dish directly. B: the source supports the dish or its geographic attribution, but not every recipe field traces to one dish-specific page. C: support is partial. D: the dish can be named but no recipe is traceable — these records are published for reference only, with no method and no recipe markup.

Estimated quantities

Iranian home cooking is largely transmitted without written measurements. Where a source gives no quantity, the quantity shown is an estimate and is labelled. Nutrition figures are estimates for a stated serving size.

Deliberate blanks

Where nutrition is unknown it is left blank rather than filled with a category median, and never shown as zero. Cooking time is not recorded in this release, so no cooking or total time is displayed and none is emitted as structured data.

Photography

No photographs are published yet. The geometric patterns on these pages are ornament. They are not pictures of the dishes and are never presented as evidence of one.
