These records trace to a specific official source page. Most records on the site are one step less direct, and every page says which.

How to read a record

Record ID

Every dish keeps one permanent ID, in both languages. IR0001 is the same dish whether you read it in Persian or English.

Evidence grade

A means the source documents this dish directly. B means the source supports the dish or its region, but not every recipe detail. D means we can name the dish but cannot trace a recipe, so no method is published.

Estimated quantities

Iranian home cooking is rarely written down in grams. Where a source gives no measurement, quantities are our estimate and are labelled as such.
