Ingredients

Quantities below make about 4 servings (Estimated)

Quantities and nutrition on this page are estimates unless the source gives measured values.

Method

  1. Scrub the beets well and trim the tops.

  2. Place the unpeeled beets in a pot and add a little water.

  3. Cook covered over low heat for one to two hours until completely tender.

  4. If you like, reduce the cooking liquid with a little salt at the end.

  5. Peel while warm, slice into rounds, and serve with the cooking syrup.

Cook's notes

Cook the beets unpeeled so they keep their color and sweetness, and save the cooking liquid — that is the syrup served with them.

Background

Laboo is a popular autumn and winter street food in Iran, sold in the cold months alongside steamed fava beans and corn.
