Method

  1. If the olives are very salty, soak them in water for a few hours and drain.

  2. Grind or very finely chop the walnuts with the garlic and aromatic herbs.

  3. Combine the pomegranate molasses, spices, and a little salt with the walnut mixture.

  4. Coat the olives thoroughly in the mixture.

  5. Refrigerate for at least half a day, preferably a full day, to develop the flavor.

Cook's notes

Use a sour pomegranate molasses with no added sugar; the mixture tastes better after a day.

Background

Zeytoon Parvardeh is among the best-known accompaniments of Gilan and the Rudbar area, and its identity is tied to the olives and walnuts grown there.
