Method

  2. Drain the rice and layer it in the pot with the chopped herbs.

  4. Fry the fish, or grill it in the oven or over charcoal.

  5. Serve the fish alongside the rice with pickles and fresh herbs.

Cook's notes

Distribute the herbs through the rice layers to keep their color, and avoid overcooking the fish so it does not dry out.
